The vegetable is first immersed in curd and then dried; after which it is fried in oil as sundakkaivathal. The fruits that grow in the Sundakkai plant look like berries or green peas. In many parts of Southern India, the fruit sundakkai is taken directly or served as sundakai sambar, sundakkaiaviyal or sundakkaiporiyal.
